I'm sure it depends on a variety of factors but a while back my MIL sent us some cheese cake and we ate some and then forgot about it. It was in the fridge for over a week when I noticed it again and though I can't say it tasted perfectly fresh it was delicious and very far from bad. I wouldn't recommend preparing it that early in advance but just saying that it doesn't seem to go bad that quickly. AFAIK most cheesecakes freeze beautifully so I would probably opt to prepare it early, freeze and take it out on the day for optimum freshness. Enjoy your cakes!
