Pasta with sundried tomatoes and goat cheese
I think this came from shmais?
10 oz jar sun dried tomatoes in oil, or plain - soaked in a little water
onion, chopped
4 minced garlic cloves
quarter cup tomato paste
cup white wine
pkge pasta - we used thin spaghetti
3 T fresh parsley
pepper to taste
pkge goat cheese, crumbled (3 - 7 oz)
You boil the noodles - or use leftover noodles and in a separate pan, sautee your onion and garlic in a little oil. Add the SD tomatoes, tomato paste and cook until hot; add the wine and let liquid reduce by half.
Add your parsley and pepper, then the cut up goat cheese and finally your noodles. Serve in a gloppy mess on plastic plates. Yummers !!!
