Having a guest for shabbos who has a "sensitive digestive system" and the only clues were no oily potato kugel or red meat. Any suggestions for a side dish? (I have the rest of the meal).

white rice is easy on the stomach (brown has too much fiber)
or roasted sweet potatoes

As a sensitive stomach person, I love couscous with (soup) veggies (ie veggies cooked a long time in water; zucchini, carrot, onion, sweet potato, potato)

The cookbook enlitened kosher cooking has a recipe for fat free potato kugel - I make a version of it, posted it on my blog the other day - http://skinnykosherkitchen.blo......html
Hope that helps :-)
Good shabbos

What about mashed potatoes? Use soymilk to make them softer and creamier rather than lots of margarine.

Last friday I made my potato kugel and forgot to put in oil. It was delicious!

Thanks for the ideas. I ended up making roasted potatoes --reg&sweet. Really yummy! They were all gone. Most of my meal was fine for her. One side dish was questionable--so was looking for an alternative-- but she did try it.
