What's your HEALTHY Shabbos menus this week?

Yes- many of the weekly Shabbos menus posted are healthy.

Let's start one here to inspire healthy eating.

I plan to limit/remove white flour, sugar and fried foods.

Looking forward to hear your menus and healthy Shabbos additions. Smile

Try soup made of pureed vegetables (butternut squash, zucchini, potato spiced with corriander and cayenne pepper).

I just got butternut squash at the veg store this morning. He said to add some ground walnuts and almonds, sprinkle cinnamon and bake. I'm trying it as a side this Shabbos.

I want to try the mixed apple and berry crumble in the recent ami magazine. They had some healthy recipes in that issue.

I think most of my food is somewhat healthy
I do not make a menu. I just cook whatever Im in the mood of eating or serving.
on a weekly basis I make ww challah, salads and dips (usually about 5-6 each week) a variation of techina, chumus, beets, matbucha (w/ a minimal amount of oil), corn salad, eggplant salad, parsley dip, etc. all are fresh, tasty ( I hope) and relatively healthy
fish (s/t I do fry it) w/ a sauce on the side or cooked or baked in a sauce-n/t store bought
chicken- again, no store bought sauces
rice a veg or 2 and a salad.
nothing so fancy but everything is home made.
desserts are cakes/cookies/brownies made w/ oil. when I can I sub 70% ww flour
I generally do not make kugels bec I feel like it's not a real veg. my kids love veg. why mush it up w/ sugar/mayo/eggs when they'll eat it plain?

I am into making healthy muffins lately. banana, zucchini.... and I sub half of the oil for applesauce. this week I am going to try 3/4 applesauce and 1/4 oil and see how that goes over.

How do the cakes/muffins come out with apple sauce? Is it the same consistency. I'm sooo ready to make healthy desserts but I want to make sure people will eat them. My son was cukoo over the chagim from all the mezonot etc (leisheiv basuka was always cake) and I think we all need a cleaner lifestyle in my house...

All the cakes and muffins I've tried were fine; the cookies I've done had a very different consistency. (Not bad-tasting- just with a more cake-like consistency)

Some oils are good for you with lots of benefits, maybe try virgin unrefined coconut oil in cookies instead of canola oil or other refined vegetable oil. It is not so much the presence of the fat that is unhealthy but the sugar and the oils that turn toxic in your body. Can you replace the white sugar with something else? Date honey, regular honey, pure maple syrup, agave syrup, brown rice syrup, apple juice concentrate, etc?

My menu is usually something like this:
Fri night
chicken soup with lots of vegetables and shredded chicken
chicken roasted over potatoes and sweet potatoes with peas and carrots added in right before it gets reheated
string beans with almonds, seasoned with soy sauce and date honey
dessert - everyone likes the coconut milk ice cream I've posted

Shabbat lunch
any leftovers
rice
grilled chicken of some kind
salad and salatim (more of them if I have guests)
sometimes a broccoli or zucchini souffle or ratatouille served at room temp
dessert

friday night:

multigrain challah

chicken soup w/lots of veggies

baked chicken w/spices
quinoa pilaf
salad

healthyish cake


lunch:

multigrain challah

guacamole
hummus
lentil & sundried tomato salad
baby bok choy salad
spinach salad
marinated tomato-basil salad
egg salad or deviled eggs
fish if you want

chulent
grilled chicken breasts

healthyish cake
fruit

less food is healthier. so when its just usi can get away with serving just one course. we have challah, white meat chicken, roasted cauliflower, roasted sweet potato or string beans, sorbet for dessert.
shoboss day is challah' leftover chicken, brocolli kugel,potatoes and onions in the crockpot, fruit for dessert.
no soda.

are you sefardi? I have very good memories of eating at my sefardi friend's house when I was single - this was her menu! Yum to all your salads/dips...
