I need recipes using rice flour and oats

My baby has eczema and he's allergic to wheat, spelt and eggs.(and most foods... Sad ). I have to use rice flour and oats if I wanna bake cakes or cookies for him. I can use egg substitutes for recipes using 1-3 eggs.

With oats, you can make flapjacks. The basic recipe is 2 parts oats, 1 part each softened butter/margarine and 1 part sugar (light brown or unrefined), you can add raisins and honey/golden syrup if you want it gooey. Mix all ingredients, flatten on a baking tray lined with baking parchment/oiled foil, score into 10-14 pieces, then bake at 180C for about 20min till bars turn golden.

The only thing in this very simple recipe is it does contain sugar. I haven't tried but maybe you can use mashed dates/banana combo or something less sweet if giving to a baby?

With rice flour, you can make biscuits. Persian rice biscuits (naan berenji) is purim/pesach classic!
I need to doublecheck but if I recall it is 2 cups rice flour + baking powder, 2 eggs, 1/2 cup sugar and 1/2cup oil (though I think I usually use less oil). Mix eggs, sugar and oil first, mix baking powder and rice flour separately then add to the liquid, combine to make thick batter. Let rest for half an hour, take 1 tablespoon heapful, roll into balls then flatten to circles. Bake at 180C oven for about 15min (don't be alarmed if it still looks white-ish or cracked on the top). You can add coconuts or ground almonds or walnuts, flavour the dough with a bit of cinnamon and/or cardamon or rosewater.
