Healthy muffins

I am looking for a recipe to send with my husband in the morning. He wants muffins... but I dont want to make the kind that isnt healthy.
So I want to use whole wheat flour, maybe some applesauce instead of all oil. less sugar than usual and no butter or marg.

Anyone have a recipe they have tried and KNOW its good? I want to put either blueberries or chocolate chips in it (yes I know, but I need to give in a bit!)

Nothing with mashed bananas either. A lot of recipes I saw here have that.

Thanks and please let me know if you have any.
Also if it has a nice fluffy texture, not chewy and heavy.

Here is a recipe for blueberry streusel muffins that are delicioius:

1/3 cup/s Cane Sugar
2 tablespoon/s Oil
2 tablespoon/s Apple Sauce
1 Egg
2 1/3 cup/s 70 Whole Wheat Flour
4 teaspoon/s Baking Powder
1/2 teaspoon/s Salt
1 1/3 cup/s Soy Milk
1 teaspoon/s Vanilla Extract
1 cup/s Frozen Blueberries
Streusel Topping
1/2 teaspoon/s Cinnamon
2 tablespoon/s Oil
1/3 cup/s Cane Sugar
1/3 cup/s 70 Whole Wheat Flour

Preparation
In a bowl, mix together sugar, oil, and applesauce. Add egg. Mix well. Combine flour, baking powder and salt; add to the bowl alternately with soy milk. Stir in vanilla. Fold in blueberries. Spray paper lined muffin tins with oil spray (pam). Fill 2/3 full. Set aside. In a small bowl, combine all streusel ingredients. Sprinkle evenly over muffins. Bake at 375F/190C for 25 - 30 minutes. Remove from pan and let cool on a wire rack. Enjoy! Nobdy will know that they are lo-fat and healthier than regular muffins!

I make these atleast 2 times per week
(can make this in my sleep its so easy once you get hang of it it takes 5 min to prepare)

preheat oven to 350

mix with hand mixer:
2 eggs
1 1/4 cups sugar ( SPLENDA works best I find stevia and xylitol make it too heavy)
1/2 cup oil (can use applesauce)
1/2 cup orange juice
2 1/2 tsp baking powder
mix just till combined

then take
2 cups whole wheat flour
1/2 cup boiling water
pinch salt
mix till combined

then I add sugar free chocolate chips and mix with spatula
sparay pam
divide into 2 muffin tins (6 each)

take out after 15-20 min (they should not turn brown they should be light and fluffy so I usually take out after 15 min)

I used to make these all the time.
carrot muffins:
3 lg carrots grated (I use alot more)
3/4 c ww flour
3/4 c reg flour (I use all whole wheat)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c brown sugar
2 tsp lemon juice
1/2 c oil
2 Tbsp water
1 tsp vanilla extract

ra_mom posts yummy muffins- don't think they are fluffy, though. They are absolutely delicious- I like them better than the non-healthy counterparts!!

Thanks so much!
Made these yesterday and my husband liked them a lot! I didnt have blueberries so I used chocolate chips, but he said it would prob be even better w bluberries. thanks!

These are absolutely delicious. Follow the recipe exactly.

Oatmeal Muffins

Makes 12 medium muffins

1 cup almond milk
1 teaspoon white vinegar
1 cup rolled oats (not quick oats)
1 large egg, at room temperature
¼ cup dark brown sugar
½ cup canola (you can use about a tablespoon less)
1 cup plus 2 Tablespoons white whole wheat flour
¼ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1/2 teaspoon cinnamon, freshly ground
Add-ins of your choosing
Combine milk, vinegar and oats in a large bowl and let stand one hour.

Preheat the oven to 375°F. Line a twelve-cup muffin tin with cupcake papers.

Crack the egg into the oat and milk mixture; add brown sugar and mix to combine. Stir in oil

Sift remaining ingredients into the bowl: flour, salt, baking powder, baking soda, & cinnamon. Gently fold into batter, taking care not to over mix.

Sprinkle add-in of your choice and combine muffin batter gently.

Scoop batter into muffin tins. Bake until light brown and tops spring back when gently touched, about 15 minutes.

Note: Muffins will take slightly longer to bake if you are adding fresh fruit such as blueberries or rhubarb.

Remove from oven and cool in tins. To remove, run a sharp knife around the edges and pop muffins out. Enjoy!
