I'd like to make at least one cake/cookie batch with matzoh meal so we can use for kiddush when not eating right away. No one I've asked seems to have gebrokts recipes. Does anyone here have a good recipe?

I haven't made any in years because I cannot eat grains. I used to make a lovely sponge cake, but I think the recipe is buried in my mom's pesach baking stuff box...

for now, this is my method:

1) go to store
2)find passover food
3)place manischewitz choc chip cookies in cart
4)pay for said cookies

I don't buy them that often either. I make cakes using almond flour.

I wish you luck in your quest.

I once made oatmeal cookies using oat matzah meal. they came out pretty good. I just threw things together, though.

why not try a regular oatmeal cookie recipe and use matzah meal instead of oatmeal?

mummie I don't trust myself to "throw together" a cake. I do that with some of my cooking but for cakes I need an exact proven recipe... If all else fails I'll definitely go for your tried and true method :-) I actually remember buying gebrokts mixes last year that were quite good and even came with icing. But, alas, I could not find any in my grocery this year! Maybe we are the only 4 gebrokts eaters anywhere, not just on this site!

whirlwind, I suggest you look on amazon for those mixes. they do sell some pesach food, though I only ever see them when I look for non-perishables in the warehouse deals/manager specials sections. I've never actually bought that stuff for pesach Smile

Passover Banana Chocolate Chip Muffins

Recipe type: Passover Dessert
Serves: 18-24 muffins
Ingredients
1 stick margarine, melted -- I used oil last year and it was fine
1 cup sugar
2 eggs
3 ripe bananas
1/2 tsp. vanilla extract
3/4 cup matzah cake meal
1/2 cup potato starch
1 tsp. baking soda
1 tsp. salt
3/4 cup chocolate chips (optional)

Instructions
Preheat oven to 350°F. Line 18-24 muffin cups with paper liners.
In the bowl of a standing electric mixer, beat melted margarine with the sugar and eggs until pale yellow in color.
Add the bananas and mix until broken down and mashed.
Add the vanilla and mix to combine.
Add the dry ingredients: cake meal, potato starch, baking soda, and salt. Mix to combine.
Add in the chocolate chips and stir by hand so the chips don’t break up.
Fill each muffin cup 3/4 of the way and bake at 350°F for 15-20 minutes until light brown and the tops springs back to the touch or a toothpick comes out clean (avoiding the chocolate chips, they will be melted).



Passover Chocolate Chip Cookies

Serves: About 3 Dozen

Ingredients

1 cup margarine (I made them dairy and used butter)
¾ cup brown sugar
¼ cup sugar
2 eggs
1 cup matzoh cake meal
¼ cup potato starch
1 pkg. vanilla pudding mix
1 tsp. baking soda
¾ tsp. salt
1 tsp. vanilla
2 cups semi-sweet chocolate chips

Instructions

Preheat the oven to 350 degrees.
In the bowl of an electric stand mixer fitted with the paddle attachment, cream the margarine, brown sugar and sugar.
Add the eggs one at a time and mix until combined.
With the mixer on low speed add in the matzoh cake meal, potato starch, vanilla pudding, baking soda and salt. Mix until combined.
Add in the vanilla and chocolate chips.
Using a 2 Tbs. size cookie scoop, drop the dough onto a parchment lined baking sheet and bake for 10-12 minutes until the edges are slightly brown for a soft and chewy cookie. Bake 12-15 minutes for a crispy and crunchy cookie.

We eat grabruks (sp?) but only shmura matza so most recipes aren't worth it but I'm with you in spirit!

Add another gebrochts eating family.

I'm not taking my cookbok out til Sunday but I have a great cake - apples, chocolate, nuts, matza meal, 6 eggs, no oil. I'm sure I've posted the recipe here before.

We are also a gebrokts family.
I've been making these mandelbrot for several years now and everyone loves them!

I sprinkle vanilla sugar on top as well as cinnamon.
I also double the recipe and freeze them so we have them for the entire chag.

Brownies
5 eggs
2 ½ cups sugar
1 ¼ cups oil
¾ cup cocoa
1 ¼ cups matza meal
1 ½ cups walnuts – optional
Vanilla – optional

I like the idea of using oat matza to make cookies. I never thought of that!

Pessach cake (optional nut cake)
6 egg whites beat well and than add a cup of sugar
Put the mixer in slow, add 6 yolks, a little bit less then half a cup of sweet wine, a tea spoon of baking powder if you have, ground nuts and last a cup of matzo meal or matzo cake meal, if you are not using nuts add 3 spoons of oil, sorry dont know amount of nuts...
Bake in a preheated oven 350 until you try with a toothpick and is clean, more or less 45 min. ( took my electric oven much longer)

Chocolate apple nut torte
(This is so moist and delicious people ask for it year round.)

6 eggs, separated
1 1/3 C sugar
1 C ground nuts (recipe says walnuts, but you I'm going to try something else next time, just for fun).
2 apples, grated
4 oz. fine swiss chocolate, grated
1/2 C matza meal

Preheat oven to 350. Grate chocolate in food processor or by hand, ditto apples. Beat yolks with sugar, add chocolate, apples, nuts, matza meal. Beat whites until stiff but not dry. Fold in batter. Bake in springform pan for 45 min. Cool in pan. Top with confectioner's sugar, or, for a dairy meal, with whipped cream and chocolate shavings.
