here they have "in lieu of shaloch manos". people who are going away but want to send something to neighbors and friends, people who want to help raise $$ for the school, and others who just dont want to make alot of shalach manos participate.
the school sends out a mailing about the campaign. people send in a list of people they want to "send" to, along w/ $5 per name. the school sends a nice poem, letter or whatever interesting idea they can come up w/ to those people. each person recieving one gets only one w/ a list of the names of those who "sent" to them.
its simple, nice, not expensive and a great fundraiser for the school.
one still must send out a shalach manos of their own to be mekayem the mitzvah, but dont have to go overboard (like I do Very Happy ) with the # of shalach manos they send.

IUt may be a bit late for this year, but I've been involved in our school's shalach manos for years (not anymore because dd doesn't go to that school anymore) and it makes really good money.

We used to go nuts with the ordering and now a friend of ours created a website called happypurim.com which you sign up and people can go and order there for your particular institution. Its a wonderful set up.
