I somehow over calculated on sweet potatoes. I have way too many. Any good recipes out there?

sweet potatoe fries for snacking on or just bake them & serve with melted marshmallows [I do believe they're kosher for passover]

Cubed sweet potatoes, peeled chopped apples, a few tbsp of brown sugar and of a handful cranberries all baked up together - I could eat this stuff all day and night.

-sweet potato fries
-baked or twice baked
-sweet potato kugel
-sweet potato pie, can be non gebrokts just leave out the crust
-cut into chunks and drizzle with olive oil/rosemary/thyme if you use them
-if you use quinoa on pesach I have a recipe for quinoa sweet potato patties
-mashed sweet potato and squash, top with fried onions
-sweet potato can be added to chicken soup or make a pureed sweet potato soup I have a yummy recipe if your interested
-I make sweet potato muffins year round, you can probably make a pesach version if you use matzah meal
-mash cooked sweet potato with a little oj and roll in ground nuts and bake

I love my simple recipe for delicious whipped sweet potato.


1) Place potatoes into boiling water until they are fork tender

2) Cool slightly so that you can handle potatoes

3) Place warm/hot potatoes into food processor or just put them into a bowl that can be used with a blender

4) Add margarine to taste, a little goes a long way here so use less to start and put in more later on if you desire.

5) A splash of cream- ONLY A LITTLE BIT!!! You can now begin to whip everything together. It should turn into a beautiful creamy, fluffy mixture. You should add another splash or two of cream if needed until desired consistency is achieved. At this point you might want to add more margarin after taste testing. It shouldn't require much though.

*I actually put in riches whip last time I made this (I think that's what it's called). I've used other cream substitutes as well as parve almond milk or whatever was in my kitchen. Obviously, it should be KLP for Pesach.

6) Place into a dish and garnish with cinnamon. Sometimes I don't use cinnamon and it tastes just as delicious.



This recipe is really a must try. It's so simple but soooo good.

1) bake sweet potato with some paprika

2) what I call "sweet potato mush" , use potato starch instead of flour and skip the crust for pesach

2-3 sweet potatoes ¼ cup sugar
2 eggs ¼ cup soy milk
½ tsp vanilla ¼ cup brown sugar
¼ cup flour ½ cup chopped walnuts
½ stick margarine, melted Graham cracker crust



Mix the sweet potatoes, sugar, eggs, milk, and vanilla. Pour into crust
or dish. Mix the margarine, nuts, brown sugar, and flour. Sprinkle on
top of pie.

SWEET POTATO KUGEL

6 sweet potatoes
1 onion
1 grated apple
4 eggs
half to one tsp salt
1 cup ground almonds

1. Peel & grate sweet potatoes, onion and apple.
2. Mix other ingredients
3. Bake 45 minutes 190

Here's a sweet potato soup, courtesy of one of the Kosher by Design books:

oil as needed
1 chopped celery stalk
1sliced leek
1 sliced shallot
1 diced medium onion
1.5 lbs chopped sweet potatoes, peeled if desired
6 cups broth
1/2 c sliced carrots
1 tsp cinnamon
pinch nutmeg
1/4 tsp salt
pepper to taste
1 cup milk or parve substitute

1. Heat oil in a soup pot on med-hi. Saute celery, leek, shallot, and onion until soft, about 5 minutes.
2. Add sweet potato. Saute 2 min.
3. Add 4 cups broth. Bring to a boil. Simmer 20-25 min.
4. Add carrots, cinnamon, nutmeg, salt and pepper. Cook until everything is soft.
5. Puree in batches for 3 min each.
6. Return to the pot and stir in the remaining broth and milk.

Cooks' Illustrated Roasted Sweet Potatoes:
This method makes sweet potatoes that are golden and glazed, with not a pinch of sugar added. The secret is the baking method heats the potatoes to just the right temperature range, and keeps them there long enough to exude and caramelize the carbohydrates in the potatoes.

1. Line a baking pan with foil. Grease with 2 tsp of oil, or more if needed to grease the whole pan.
2. Cut potatoes into 3/4-inch thick slices.
3. Dip each slice into the oil so it's moistened on both sides. Arrange slices in a single layer in the pan. Season with salt & pepper, or any spice mix you like.
4. Cover the pan with foil and place on a center oven rack.
5. Turn the oven on and set to 425. Bake 30 min. Yes, you put the potatoes in a cold oven.
6. Uncover, continue baking at 425 for 15-25 min, until the bottoms of the slices are golden brown.
7. Flip with a spatula. Bake another 18-22 minutes until the other side is also golden brown.

Sharon B are you still around? or does anyone else know if this really bakes at 190? or have a tried and true sweet potato Kugel that can cut into pieces( not mush)?

Never made that recipe, but I assume she meant Celsius. So 375 Fahrenheit.

I would assume she meant 190 Celsius, which is something around 375 Fahrenheit.

Spicy Sweet Potatoes

I cube sweet potatoes. Drizzle with olive oil, and sprinkle salt, pepper, garlic powder, paprika and cajun to taste. I also add a drop of montreal steak spice. Bake at 450 for about 45 min, uncovered, stirring carefully, occasionally.

Variations:
-Can add to lettuce with other veggies for a yummy salad.
-Can add cubed yellow potatoes as well.
-Serve with dipping sauce

Anything a carrot can do, a sweet potato can do better.

I have recently fallen in love with grated raw sweet potatoes added to garden salads.

IMHO, sweet potatoes are sweeter and have a better texture than grated carrots.

If you grate them fine, you can make a "mock carrot salad" with a pinch of sugar, salt, a bit of mayo, and some raisins. Chopped pecans are good in this, and if you have any KLP curry powder, you could add that to be extra fancy.

Sweet potato chips. Slice thin and roast with either a sweet or salty seasoning. I like olive oil, salt, onion powder and Cayenne
