We use vinyl tablecloths on the counters, taped on with "painter's tape". They sell rolls of the vinyl in Wal-mart and fabric stores. They are so inexpensive and really easy to cut to fit the counters. You can get plain ones or fun designs. We also use different colors for meat and dairy counters. (My mom gave me this idea a few years back. She was tired of trying to scrape contact paper off each year and came up with this!)
