I love parties and really enjoyed making my boys' upsherins!
My oldest's was in the winter so we did a motzei shabbos party with family and friends. We had a buffet with milchig food and cheescakes and coffee, a salad party, cookies, candy etc. My family and friends all made things, and it was so nice!
My second's was on a Thursday, so we did a Thursday evening supper for family, friends, kids, etc. We served sesame chicken, cholent, and potato kugel and everyone LOVED!
I got all kinds of setup ideas from Pinterest and Hostess with the Mostess http://www.hwtm.com/
Good Luck and Have fun

so another question. My little one will be 3 on the 7th day of Chanukkah. It falls on a Tuesday. Can I do Upsherin on the Sunday before he actually turns 3?

If you want to make the upshern earlier would depend on your minhag. Minhag Chabad is not to cut the hair until the third birthday. So you cannot do it earlier than the child's birthday.

I would wait for what comes before, civil or Jewish date, but I was raised with this maybe kinda superstitious
