Here it is! I finally unpacked my recipe book -
Mommy's a'h Nut Cake REcipe:
Bake in round bekaleh with open center:
6 eggs
3/4 cup sugar
6 oz. ground walnuts
1/4 cup plus a bit more potato starch
1/4 tsp. plus a bit more dry coffee
Tiny amount of grated lemon rind
Make snow, turn down mixer speed. Add rest of ingredients. Bake 350 degrees for one hour.
Note: The reason why some of the ingredients have weird amounts (plus a bit) is because the original recipe was in a unit of 9 eggs and 1/2 cup and 1/2 tsp. I revised it to accommodate the bekaleh size, which only accepts a batter of six eggs, hence the funny amounts.
Enjoy - and don't eat the whole thing yourself - leave some for your family!!!

Downs, is it possible for you to post the original recipe of that nut cake with 9 eggs? I have non-disposable tube pans that can accomodate a 9 egg recipe. (Actually my mother has. I am not making Pesach yet but am pitching in to help my mother as much as I can.)

Get those lawyers prepared...
So smart me writes down the ingredients and runs up to bake. I made the cake without making a snow - just threw in all the ingredients. UGh gross!! Should I rebake or give up and let everyone survive one week without cake!!!
Downs, just send over a ready made piece! (with a cup of malted)

OMG happyone! You must've gotten a walnut pancake!!
No chance of malted coming your way, my way, nor any way!!
You're thinking of baking ONE cake for all of Pesach? I'm planning to bake approximately a dozen. These don't have flour; they go like hot cakes!

Last year my mil gave me a great "trick". I hate making all the snows, separate bowls... She told me if you just beat the whole eggs with the sugar for a very long time it's just as good. I did that and every cake came out delish! I'll ask her again in the AM just to make sure.
