I stir fry vegetables like peppers, carrots, sweet potato,zuchinni etc. and add water and spices. add to dish and add fish on top with salt and spices. covered for 45min at 200c and it comes out nice and soft. And the vegs are delish also.

Do you use store bought products on Pesach
I saw kosher lepesach imitation mustard if that helps.
No idea how it tastes. You can also mix tumeric with water and a little kosher lepesach vinegar
If you use canned manderine oranges and jelly or marmalade, I have a recipe everyone loves.
My recipe is not exact though.
Salmon
Salt and pepper to taste
Orange marmalade or apricot jelly, which ever you have on hand
Bake
Serve this hot on top of cold orange pepper slaw
Orange Pepper Slaw
3 color peppers cut extra thin strips
Red onion cut extra thin strips
1 can manderine oranges with liquid
Kosher lepesach vinegar to taste
Mix and marinate

My 2 favorites for salmon steaks. Both bake at 400 for 7 minutes, switch racks, then 5-6 minutes. Remove from pan 5 minutes after taking from oven, as they will continue cooking after they have come out. Cool and refrigerate, or serve warm.
Oil bottom of pan, put salmon in with thickest parts on corners and edges.
1. Sprinkle with pepper, lemon rind, (or you can buy lemon pepper) and a tiny bit of salt.
2. Mix fresh squeezed lemon juice with homemade mayo. Pour over salmon.
(Can you tell that I like lemon?)

Sorry no measurements. I don't eat fish, but this supposedly tastes very good.
Puddle of oil on plate. Sprinkle oil over all the oil, then a thin layer of black pepper. Garlic and paprika (more than the salt) then spoon in sugar until it stops dissolving in the oil.
Mix. Cover fish on all sides with the mixture (should be thinner than a paste, thicker than just oil) and let marinate.
Bake covered at 350 for a half hour. Reportedly tastes good warm and cold, but better warm.

Place salmon in a pan. Sprinkle with salt and chopped red peppers and some lemon juice. Fill pan about halfway up salmon with red wine. Bring wine to a boil, then cover and lower to simmer. Cook 10 minutes or until done. Serve warm or room temperature.

My family loves the recipe from Chic Made Simple. I think all the ingredients should be available pesadik:
Poached Sweet & Tangy Salmon:
6 salmon fillets
1 cup duck sauce
1 cup ketchup
3/4 cup brown sugar
4 tbsp lemon juice
4 tsbp apple cider vinegar
1 small red onion, sliced
Fill pot with enough water to cover salmon, bring to a boil. Add salmon, cover and cook on low for 18 minutes.
Remove salmon from pot to dish (do not use a foil pan - the salmon will keep cooking)
Mix ingredients for sauce. Pour over salmon. Marinate overnight. Serve cool.

Salmon
Everybody asks me for this recipe! You can serve with slices of lemon.
2 cloves of frozen garlic
6 tablespoons of light olive oil
1 teaspoon basil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon of lemon juice
1 tablespoon of fresh parsley
About 4 pieces of salmon
Mix marinade ingredients together. Marinate salmon in marinade in a Ziploc bag for 1 hour.
Bake until ready- 8-10 minutes

I do every shabbos, it's really easy and it's always a huge hit:
I order fresh norwegian salmon, but you can freeze it, I take out 4-5 slices (filleted no skin) ea week
Pour some lemon juice on the salmon (makes it have a bit less fishy taste and just in general a good taste)
I cut up a small onion or half an onion, then pour on enough olive oil that it will "oven saute" it
then spice with season salt, garlic powder & pepper (spices can be over the salmon+lemon juice, or over the onion+olive oil)
cook open at 400 degrees for 10 minutes on each side.
(when I flip it I usually do at least spices, or spices and olive oil & lemon jc on side 2 - but I have been too lazy or doing too much erev shabbos and forgot and it still comes out good if you don't)
