did you check the Pasta Salad thread in this section?
I suppose you could add sundried tomatoes to any of them, or some of them.

I haven't tried this yet, but I just heard about it and its sounds delish: Make "pesto" but instead of fresh basil, substitute the sun dried tomatoes. I don't have an exact pesto recipe, but in a food processer just combine the tomatoes, garlic, olive oil, pine nuts, salt, (parmasean cheese for milchig), I guess you could add some basil too... This would be great for pasta salad, but I bet you could also use it as a dip for challah, or even a marinade for grilled chicken breasts. (There's a recipe in Kosher by Design for grilled chicken in pesto, so just replace the pesto with the sun dried tomatoe mixture).
