Can apple juice be used in place of orange juice?

A cookie recipe calls for 1/4 cup oj. I don't have any. Can I use apple juice instead?

Yes. You can replace with water, apple juice, milk or pareve milk.

the citrus from the orange is a taste component - especially in a sugar cookie - like lemon in a sponge cake

If it has baking soda you may need to add some acid, a teaspoon of vinegar will do (you won't taste it). But if there isn't enough acid to interact with the rising agent it can end up bitter.
