lasagna (either dairy or meat)
take a type of fish you like such as salmon or tilapia (can be frozen), cover with frozen veggies and pour on a dressing such as creamy Italian. bake covered till fish is done

For quick, complete non-meat meal in the oven I do tuna-pasta casserole with vegetables or baked ziti with spinach or grated squash mixed in.
(Not to take away from OP, but any other non-fleishig ideas?)

Most veggies roast nicely.
Root vegetables such as parsnip, celery root, sweet potato, turnip, carrot, potato, etc. usually work nicely especially when mixed together in some combo or another.
Squash is great, breaded or marinated in olive oil and herbs.
broccoli or cauliflower. Cauliflower popcorn is particularly popular.
Green beans or asparagus are yummy when slightly oven charred.
Most proteins can be cooked in the oven as well. Off the top of my head I can think of several different ways to prepare chicken; on the bone, off the bone, breast, thigh, breaded, marinated and broiled, slow cooked, wrapped and/or stuffed, etc.
Large cuts of meat do well in a low and slow oven, such as brisket or french roast.
flanken and sweet potatoes in a pan, you can leave it in the oven in the morning and come home to a delicious meal.
Bread puddings or stratas for a dairy meal. or quiche (though that would likely call for sauteed vegetables, which can be done in the oven btw but would require an extra step)
I'm not a huge fan of pasta that hasn't been preboiled, but people do it and like it so ziti or lasagna are options.

Teriyaki breaded chicken cutlets, sweet potato fries, oven steamed broccoli (about 40 minutes total)
Garlic baked salmon, yellow rice, sesame green beans

Cube peeled potatoes. Cover with water and Bake on 375 covered for about an hour, depending on how much you are making. Pour out all water, add salt and mash.

I have a healthier version of the Baked chicken and veggies. (less oil, no brown sugar, etc). Just toss chicken cutlets with flour, place in pan, cover with peppers, zuchhini, mushrooms, and red onion and pour over sauce. cover tightly and bake. (I can post sauce if anyone is interested).
Dairy:
lasagna (don't boil noodles first, I add water to the pan before baking, or use no boil noodles).

Tangy Baked Chicken
1 1/2 lb chicken cutlets
1/4 cup WW flour
Toss cutlets in flour and place in 9x13 pan
Cover with:
1 1/2 colored peppers cut into strips (I used 2 for more veggies)
1 yellow squash cut into 1/2 rounds
1 green squash cut into 1/2 rounds
1/2 red onion cut into rings
1 8oz box mushrooms sliced (I used 8 oz canned sliced mushrooms)
Using immersion blender mix together sauce (probably can skip the blender but it does mix the onions in nicely):
1 Tbsp olive oil
3 Tbsp water
2 Tbsp soy sauce
1 Tbsp ketchup
2 Tbsp sauteed onions (I sauteed a whole onion with just pam and used it all, but I"m sure you could also use the frozen sauteed onions)
Pour over veggies and toss gently.
Original recipe: Cover and bake at 375 for 1 hour. Mix. Cover again and bake another 30 minutes.
I just baked covered for 40 minutes and uncovered for 30.
I also found small nuggets tried out slightly but finger sized pieces or cutlets were really soft.

Marinate 1.5 pounds thin cut chicken cutlets in a mixture of 2 tablespoons each honey, soy sauce, oil for 2 hours or overnight.
Dredge in cornflake crumbs. Arrange in one even layer on a cookie sheet sprayed with Pam.
Bake uncovered in oven preheated to 400 for 20 minutes. (optional to spray tops with more Pam but not necessary)
