do a search. I posted awhile ago no-margarine double chocolate chip cookies and no margarine chocolate chip cookies from the mishpacha magazine. (it uses oil instead)

I make oatmeal raisin cookies all the time.'
Use more than half whole wheat flour intead of white.
Applesauce instead of oil.
Cut out more than half of the sugar.
Add raisins, craisins, nuts, choc chips, etc.

I don't think oil is so important to avoid if you use healthier ones...
there is a great maragarine-type product that is all healthy oils, non hydrogenated, etc. It's also USDA organic.
It's made by Smart Balance.
the problem is all the sugar in these recipes. GR, how do the cookies come out when you cut the sugar down to half?

I recetnly used organic rice syrup instead of sugar well the recipe called for it.
the recipe had
ground oats
ground nuts
rice syrup
canola oil
rasins/craisins
baked for about 15 minutes

I use raw borwn sugar (demerarra), & put a little less than 1/2 the amount - it tastes sweeter! I think whole wheat also makes a sweeter cookie, and although I seldom use apple juice, a bit of concentrate in the recipe, and you can cut down even more (but that's also a form of sugar...)

Use stevia instead of sugar. Add more flour instead of sugar to increase bulk or use less liquid. I did for pancakes and came out fine. Also if you soak whole wheat flour for 12-24 hours it brings out the vitamins/minerals in the flour and it's less heavy so some can be used instead of some of the white flour. I will start using butter instead of oil for milchig things, otherwise use coconut oil. I know most pple think the oils are healthier (Nourishing Traditions is a great book). Olive oil has a very low smoke point 200 degrees and above that temp, it turns into trans fat which is worse than saturated fat (assuming of course saturated fat is bad which a lot of real health experts are not saying ex. Sally Falon, Dr. Mercola). It's hard to change your way of thinking, but if you read the same thing in multiple places...

a cake is easier to make healthy. cookies need fat to hold togther.
