Do you have a recipe for chicken cutlets with potato starch breading - but something more substantial than just potato starch? For example, mixed with egg whites or something like that?
I think I saw such a recipe in the Binah one or two weeks ago, but don't have it on me...
Do you have such a recipe? I'd love to use it!

Toast ground almonds in a greased pan for 2 minutes, season with salt, and use as crumbs. Really delicous.

From a friend of mine: grind 2 potatoes one egg and salt together- makes a paste that you can dip the schnitzels in.
(Enough for about 6 chicken breasts)
Just tried and it's yum!

I use gluten free Panko. I imagine you could use gf matzah meal too. I know some ppl use matzah meal but I am not a fan. I season potato starch, dip chicken in that, then beaten egg, then the crumbs

Lemon chicken
8 chicken cutlets
1.5 cups potato starch
1/4 tsp salt
2-4 tbsp sugar (to taste)
1 tsp baking powder (I don't use this)
5-6 eggs (I think it needs less eggs since this makes quite a runny batter)
4-5 tbsp lemon juice
Mix together dry ingredients, whisk together egg and lemon juice.
Mix eggs and dry ingredients to make a batter
Dip chicken cutlets into batter and fry.
It tastes great just like this, but you can also make a sauce to make it nicer
Lemon sauce
2 tbsp potato starch
1/3-1/2 cup sugar
1 cup orange juice
1/4 of a lemons juice
Cook until thickened, should become like a jellied sauce

Coat it in almond flour which is readily available in the US for the first time this year. It's delicious.
