I have a bit of chicken soup leftover, with some of the chicken and vegis still in the pot. Would it work to add water, and let it simmer for a while? I don't need it to taste like Shabbos chicken soup...I'm really just in the mood for some soup but there isn't enough to call it a meal.
Anyone do this?

That should work-- maybe add a dash of olive oil as well. If you add too much water, it'll taste bland, but if you stretch it a bit and add some salt it should be yummy. I do that with soup all then time.

Sure, add some rice or couscous to make it a full meal.

Thanks for the replies! I usually add pasta and make it chicken noodle soup, I just have a lot less leftover soup this time...Hoping it wont be too bland...I guess nothing a bit of salt can't fix

You can also use it as stock for a new soup- add some more veggies (for example, sautéed carrots and sweet potato and maybe a zucchini or two for an orange soup, then add leftover chicken soup and water to cover, boil and simmer for half an hour, salt and pepper to taste and blend).
