Variation (even though point was for extra simplicity)
- 1 cup sugar
- 2 ripe bananas
- 2 eggs
- 3 cups, most ground almonds & 3/4 or so dried ground coconut
- Sprinkle baking soda (maybe a 1/4 to a 1/2 t?) + T lemon juice (didn't hv baking powder; baking soda is stronger, so less used, & needs an acid like lemon to activate it)

I made these in previous years, and just came onsite to find the recipe again. super easy and the family really enjoy them.

can dip half in melted chocolate for a fancy addition.

Love these cookies
Super easy
Made lots of variations

Thumbprint
Chocolate almond- added cocoa and sliced almonds
Chocolate chip - added chocolate chips
Lemon basil biscotti- lemon juice and dried basil. Formed into loaf, baked 1/2 way, sliced then baked all the way.

All with the same base.

I used 3/4 cup xylitol instead of sugar, though.

We just made 2 batches. Both had mixed ground nuts (almonds, walnuts, filberts) and half brown, half white sugar. One batch we did 3 cups nuts. One batch we did 1.5 cups nuts and 1.5 cups matzo meal.
We do eat gebrocks (with only the matzah my DH makes) but we don't buy potato starch (and I don't think it's worth the effort to make my own). Usually our baking is limited to one cake recipe that I found (מזונות) and meringues (שהכל). Last year we tried these cookies and they were great but also שהכל. (We like to have מזונות for kiddush in the morning). Now we have מזונות cookies 👍👍!!
We did taste them, pretty good but I think next time I would up the sugar in the ones with matzo meal (we also ended up adding an extra egg).

The recipe from op sounds yummy and easy. I'm looking for a simple and yummy chocolate chip cookie recipe because we have a few family members allergic to nuts.

Anyone? It's a challenge cuz I only use basic ingredients pesach. Like oil, potatoe starch, eggs, sugar, cocoa.... thanks!!!!

You can make your own confectioners sugar by processing 1 cup sugar together with 1 tbsp potato starch in the food processor.

Sounds yumm. I just have to leave out the vanilla s. And the baking powder.

thanks for these ideas. we've made the first batch of these tonight (a must every year now thanks OP). what ground nuts do you recommend?
