Did any of you ever try the gebrochts crinkle cookies from KBD Pesach cookbook?

(Another gebrochts eater who likes to have mezonos around sometimes too Wink)

Yep that's our problem! I find shmura matzah meal = the number one way to make a "tastes like Pesach cake".

However I have a lovely Pesach lasagna recipe if you are interested...

Lemon meringue pie

Crust:
2/3 C matza cake meal
1/3 C potato starch
1/4 C sugar
1/2 tsp. klp vanilla (or vanilla sugar equivalent)
5 Tbsp oil
1 small egg, separated

Mix all except egg yolk, adding a bit of oil if needed until mixture just holds together. Put in freezer for 15 min and preheat oven to 400. Grease glass pie pan with margarine. Press in crust with hands, and mix yolk with a few drops of water. Brush yolk over crust and bake 5-7 min. Cool.

Filling:
3 whole eggs and 4 yolks (whites will be top)
1 C sugar
2 T lemon zest
1/2. C fresh lemon juice
1/2 C melted margarine

Beat egg and yolk. Add sugar, lemon juice, peel. Beat. Add melted margarine. Cook in double boiler or microwave until thick and bubbly, stirring frequently. Pour into crust and chill.

Top
4 whites
1/4 t salt
6 T sugar
1 t vanilla (optional)

Beat whites until very stiff. Add sugar and salt, and vanilla if using, beating slowly. Cover pie with topping, spreading it to seal edges, and making pretty peaks. Bake at 325 for 12-15 min.

Chocolate Nut Torte

6 eggs separated
1 c. chopped nuts
2 apples
1/2 c. matza meal
1 1/2 c. sugar
4 oz. (120 grams) bittersweet chocolate

Grate chocolate (I just put in plastic bag and smash it). Peel, core and grate apples. Beat eggs yolks and sugar until thick. Stir in walnuts, chocolate, apples and matza meal. Beat egg whites and fold in. Bake for 45 min - 1 hour at 350. I use a 9 inch springform pan.

It's quite good. Enjoy.

My husband wants a mezonos cake. I don't have matza cake meal but I do have Mazta meal. Does anyone have a tried recipe? Nut free please thank you

I'd go with c.c.cookie's brownie cake as the cocoa can cover the matzah meal taste.

If you have a food processor put the marza meal in it blend and sift and use only the fine part
