Can I substitute cream cheese to farmers cheese in latkes? Thats all I have at home now and I really want to make them.

I've never tried it before and have no idea. Probably will work out fine if you soften it and have an electric beater.

I have made cottage cheese latkes before. I almost never use ricotta/farmer's cheese b/c of the fat content.

I took your advise Defy, beat the cream cheese well (added some grated apples too) and they came out delicious! Thanks!

Sure!
Add to bowl:
1 cup cream cheese
3 eggs
1 cup milk
1 1/2 cups flour
3/4 cup sugar
some vanilla sugar
1 grated apple
Mix together and fry.
Enjoy!

I once made the recipe from the Spice & Spirit & I felt so sick that it put me off ever making them again. I think ate too many & they are sickly to begin with.

I like cheese latkas a lot. I've always made them with cottage cheese.

Cheese latkes absorb so much oil when frying. I tried baking them but they didn't come out as good in taste as fried. Does anyone bake latkes that do come out tasty?

If you use a teflon frying pan, you can just use a little bit of spray.
