Any ideas of a nice place to go that has some water activities, biking, etc and is within 3 hrs of monsey?

Poconos and Delaware Water Gap area sounds perfect. There's also white-water rafting and Bushkill Falls in the area. Other options to consider would be the Finger Lakes (check Ithaca area) or Hunter/Tannersville area, which has some waterfalls (Kaaterskill) and lakes/reservoirs to hike around.
