Ministrone Soup

Here's the recipe I'll be using (for the meal before the fast):

2 yellow onions, chopped
3 carrots, peeled, chopped
3 stalks celery, chopped
2 medium baking potatoes, peeled and diced
2 small to medium zucchini or summer squash, diced
1/2 pound green beans, cleaned and ends cut off, sliced
1/2 head (small) green cabbage shredded
1/4 cup olive oil
5 cups water
1 large can (approx. 29 ounces) diced tomatoes, undrained
Salt and pepper to taste

PREPARATION:
Heat oil in large stock pot, add onions, cook over medium heat until onions are pale golden brown. Add carrots and cook 2 to 3 minutes, stirring occasionally. Repeat this procedure with the potatoes, then the celery, zucchini, beans and cabbage.

Stir in water and canned tomatoes. Bring to a boil, reduce heat, cover, and simmer 1 1/2 to 2 hours. Add salt and pepper as needed.

P.S. You can throw in a can of beans (any kind you like: kidney, garbanzo etc..), also, some ppl. like either rice or pasta in their Ministrone Soup.
I personally prefer not to put it in raw (like many recipes say), because it adds starch to the soup, so cook it seperately and add it at the end, if you like....

Love yoiur recipes Mishie

I often see minestrone with pasta curls, but I only put pre-cooked before serving, because they tend to get all big and slimy when cooked with the soup. Wink

same here. I tried the chabad gnocchi, but I think next time I wanna try yours. I am going shopping soon to get the ingredients for this.

Mishie - it was so good & it made a lot so we had it before & after the fast & I'm having it for lunch every day until I finish it.
