My recipe is the same except instead of all the spices I add chopped up pickles and lately I don't bother with the onions.

I don't like raw peppers, so I just add Israeli pickles, mayo, spices, and sometimes pickled peppers or hearts of palm.

I know someone that makes a great corn salad with sauteed onions, mushrooms, and soy sauce. It's delicious!

I know this defeats the purpose of using canned corn-which is convenience-but this type of salad tastes AWESOME with fresh, steamed corn on the cob (use a knife to cut off the kernels.)
Add some fresh herbs (basil, dill, cilantro, italian parsley...), and it's perfect.... 8) ....simple, summery and yummy.

MommyLuv, it totally defeats the purpose - but I'll be happy to taste it if you make it for me! Sounds delish!

Tila, we'll be eating the same thing! In the fridge already! I also put in a drop of lemon juice, and I use scallions b/c it's easier that onion, and I don't get stuck with leftover onion, since I don't usually need a whole one. Total prep time: 20 sec. My favorite type of recipe!

I sometimes make the real cheats' version (well, started making it for a cousin in yeshiva - it was the only salad he would eat). Open can, add a little mayo, salt, pepper, paprika, garlic powder, and THATS IT!

Some of these sound yummy, and I love corn, but DH doesnt so I never make it anymore Sad - I only used to make it when said cousin came over

yeah - my problem too - dh isn't crazy about corn...so I usually only make it when we have guests, as an extra.
