Does anyone have any suggestions. My husband would like to take a trip there for a few days. Any suggestions of cheep fun kid friendly activities there? And is there kosher food available there?

Don't know if it's too late...
There are many nice cabins u can rent on the water.
Some resorts include lakes and boat activities.
On the way, u can stop near albany and they have huge selection of kosher food in Price Chopper.
Great outlet shopping too.
There are Jewsih communities near by if looking for place for shabbos. Saratoga springs, Albany etc
There are beaches nearby as well.
