I just made these and they came out so yummy I just had to share.
In a small bowl combine
2 cups oats
1 cup soy milk
1/2 cup apple sauce
Let sit 5 minutes to soften.
In a mixer bowl beat together until creamy:
3 eggs
2 cups brown sugar
6 Tbs oil
Then add the softened oats mixture and mix gently.
Next, add
2 cups flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
Mix gently until just moistened.
Bake in muffin pans for 20 minutes at 350.
Makes 2 dozen muffins.

Are you sure it calls for 2 cups brown sugar? That's a ton! Maybe 1/2 cup?

I'll second that.
Most I'd use to that amount of oats and flour is a cup of sugar. 2 cups? No way.
If you want to keep the word "healthy" in your heading then half a cup is plenty!
And don't be fooled by the "brown" sugar. Slightly different taste, different texture, but healthwise the nutritional benefits are negligible and the harm done by all that glucose is the same.

Heres an award winning muffin recipe recipe w 1 cup oats and 1 cup flour that calls for 3/4 cup sugar, so Id prob go with 1 1/2 c sugar for the recipe OP posted.

3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder

1 teaspoon vanilla extract
Peanut butter and honey, optional

MUCH BETTER HEALTHY OAT MUFFIN RECIPE!
1 1/2 cups old fashioned oats
3 cups very ripe bananas
3 TBSP. peanut butter
3 tsps. Cinnamon
Raisins or chocolate chips (optional)
Mix all together, spoon into (12) muffin tins, bake at 350for 30 minutes or longer, until tops are slightly burned. This caramelizes the ingredients. Best if refrigerated.

Thanks but I wonder what will happen if I use that lower calorie powdered peanut butter that you mix with water to give it the consistency of peanut butter, or does that give the recipe it's oil?

The peanut butter definitely gives the recipe its oil. So, switching to the powder mixed with water would change the chemistry of your bake. However, it could still work okay, because the banana is the main thing adding moisture. It might be worth a try if you're okay with a possibly failed experiment.
