Pumpkin soup- family favorite

I just thought I'd share. Its so delicious
I recently typed up all my favorite recipes and so they are pretty handy now.

Here it is-

Pumpkin Soup

6-8 c water
2 tbsp chicken soup mix
2 carrots, julienne
1 onion, sliced thin
Curry powder
Allspice
1 large can pumpkin

Add soup mix to water and bring to a boil. Add carrots and onions. Season with equal amounts of curry powder and allspice. Add pumpkin and simmer until ready to serve.

Looks nice. There's also a lovely pumpkin soup recipe on Epicurious, calls for saffron which I don't exacly stock Wink I use fresh pumpkin - use the smaller ones.

I know this is an old thread - but I'm looking for a pumpkin soup recipe that tastes really rich and "pumpkiney" (if ya know what I mean)
When you say - one can pumpkin, what do you mean? Pumpkin puree? Pumpkin pie fillling? any other type?
does anyone else have an EASY pumpkin soup recipe for me? Dh never requests food but asked for it this year for succos because we're hosting some of his family and one person loves it.

No idea I never bought pumpkin

Just check or ask in the store for a lg can

Extremely easy, all basic ingredients. I never attempted pumpkin soup because I always thought it's too much work but after I found this I make it all the time now.

This looks great!
And Debsey, give the Epicurious one a look. You can use turmeric instead of saffron.

Can you use canned pumpkin for this? I don't really want to chop up a pumpkin right now!

Looks good. I'm wondering if I can do this with butternut squash instead since I have one here that needs using up..

Smile12345, butternut squash and pumpkin are usually interchangeable as far as consistency goes but I've found that recipes that call for pumpkin taste better with pumpkin. (Case in point: KBD Entertains pumpkin doodles.) In this case though, I say, go for it!
