I don't know original but most common is mixture of half beef and half chicken.

Not Hungarian, but we use beef. (One of) The reason(s) for the minhag is to represent Hashem covering over our (red) sins with (white) forgiveness (like the thread in the Bais Hamikdash). Chicken isn't red meat.

I don't know about Hungarian, but my Russian/Polish grandmother always used beef.
