Thanks so much! I actually bought the cubed veggies cuz they were on sale. Should I put some chicken soup as a base and then add veggies and barley and boil/simmer?

If you make a good base using lots of sweet onions and fresh crushed garlic in a saute before you start the soup, you won't need a chicken soup base. Add water and kosher salt and it will be really delicious.
