I'm trying to make my mornings a little easier. I was thinking of how at those omelet bars at simchas, they have pitchers full of omelet batter all ready to go in the pan. I have no idea how far in advance those are prepared though. Is there any reason I can't make a pitcher full of eggs the night before? Like will it spoil or taste funny or have a weird texture, or is it fine? Thanks.

You can do it. But add a little salt to the eggs aa many people don't leave eggs open overnight.

Cover/seal it completely. Don't leave it longer than overnight.
