This is a wonderful recipe for sweet, eggy challah that I've been making for years:
1c. warm water
1/2 c. oil
2 eggs
1 Tablespoon honey
1/2 c. sugar
2.5 tsp. salt
4.5 c. bread flour
2 1/4 tsp instant yeast
Place liquid ingredients in bread pan first. Add in dry ingredients with yeast granules on top.
Operate machine on dough cycle. Depending on the flour you may need to add a couple more tablespoons if the dough is too sticky. On the other hand, if the dough seems to stiff for the machine to be working it easily, add a tablespoon or more of water.
When dough is done, shape into challot. I usually make 3 medium size challot but you can make 2 large or 4 small too.
Cover challot with a clean dish towel and let them rise, on the baking sheet, in a warm place for about 1.5 hours.
Brush with egg and sprinkle sesame or poppy seeds.
Bake at 350 for 30 minutes (small ones need a bit less). I use the oven's fan setting.
You can also freeze the dough, in challah-sized lumps, when the dough first comes out of the machine. I do this all the time.
I also use the dough to make yeast cakes. One batch of dough makes 4 cakes.
