I put something up on eBay buy it now. Several people emailed me with offers. Could I make counter offers to all of them at the same time and see which one comes back the highest or I have to wait to hear back from one before asking the next?

You have to wait because if one accepts your counteroffer then you have to sell it to them. Read the not-so-fine print before you put something up on eBay.
