He recipe has potatoe starch in it because initially it was a Pesach recipe. Do you switch it to flour or do you stick to the potatoe starch?

Tip: You can substitute instant mashed potatoes in doughless potato knish. It comes out great and saves a lot of work!

I always love these tips. Do you know what the equivalent is of one potatoe to instant ???

Don't you need to adjust the amounts if you switch it? I think that you use double the amount of flour than starch? Or am I wrong?

Follow instructions on instant mashed potato box. I figure one serving equals one potato, but I often will make more and it's fine (e.g. if the recipe calls for 8 potatoes, I'll make 10-12 servings of instant mashed potatoes).

Also note that if you make this with instant mashed potatoes the bracha is shehakol.

Please post exact recipe, especially frezable and Pesachdic a very big plus

4 onions, sauteed
8 potatoes (or instant mashed potatoes prepared as instructed on box, 12 servings--use hot water, cold water, and flakes--don't need to add oil and salt, as that will be added in the rest of the recipe)
4 eggs
3/4 cup oil
2 1/2 cups flour
1 Tbs salt
1/2 tsp pepper

Mix all ingredients together. Put in greased 9x13 pan or multiple smaller pans. Brush with beaten egg and sprinkle with sesame seeds. Bake uncovered at 375 for 1 hour until brown on top.

This is the recipe that bargainlover recommended: Pesachdig and Freezable as well.
By: Miriam Pascal
Prep Time: 10 min
Bake Time: 28 min
Yields: 30 small knishes

For Caramalized Onions:
2 medium onions finely diced
1/4 Cup oil

For knishes:
8 medium potatoes, boiled and peeled
Half Cup oil
8 eggs
1 Cup potatoe starch
2 teaspoons salt
Half teaspoon black pepper( optional)
Oil for pans

Instructions:
Sautee onions in oil for 20-30 min. It can go longer and tastes better. This can be done ahead of time

Prepare knishes:
Preheat oven to: 400 degrees
1.In a large bowl combine caramalized onions, potatoes,oil, eggs, potatoe starch , salt and pepper
Breakup potatoes with a potatoe masher for better results.
2.Using electric mixer, mixing all ingredients until smoothe. Some lumps are fine. Do not over mix
3. Grease cupcake pans, well. Use a bit more oil than usual as it helps the knishes develops a fried like crust.
4. Fill pans until almost fill with batter
5. Bake at 400 for 26-28 min. Until tops are golden brown
6. Serve hot
These knishes freeze well.

You can also make nice round mounds using an ice cream scoop, egg each one (and sprinkle with sesame seeds if not for pesach), bake and serve. Though I have not frozen them.
