ideas please, most things I make for seudah have some form of flour or pastry dough- can't do that this year...

Rice. Potatoes.
You can do mini meatballs over rice for an appetizer, or larger for the main. Just check any sauces for gluten. There's no problem with most mains- roast, most chicken recipes... If schnitzel is a must, there are gluten free crumbs around that work nicely, or use corn flake crumbs (we like doing corn flake crumbs wth honey mustard as the "egg").
In any recipe in which flour is a binder, gluten free flour or even potato starch will do. This includes potato kugel (though my recipe is Jamie Gellar's, which is gluten free) and any dusting you might put on meat before searing it, or thickening sauces.

We make gluten free sushi. Just be sure to buy gluten free soy sauce and Sriracha. And all crunch is gluten so use sesame seeds

Fresh healthy food! Grilled chicken, salmon, roasted vegetables, quinoa salad, brisket, roasted potatoes or mashed potatoes, cabbage salad, Israeli salad, green salad, guacamole with corn chips, sweet potato fries

Don't forget that not everything has to be gluten free. You can serve some of your family's favorite gluten foods, just make sure to keep them separate.

Most corn flakes have barley malt so be careful when shopping

Really wanted to do soup as an appetizer so I could do meatballs as a side. Would butternut squash soup work- any recipe suggestions? (I will check on here as well : ) )

Matza mail is gluten. It's just not chametz. Do anything that happens not to be gluten, or use GF flour.

There is gluten free matzah meal too. I like gluten free bread crumbs or panko to bind meatballs.
Butternut squash soup should be fine, and sounds perfect for a Purim appetizer.

I use all my gluten recipes and convert to gluten free, for example I use authentic foods multi blend flour instead of regular flour, la choy soy sauce instead of other companies, there are a couple of options for dough and gefen makes mini pie crusts as well.
