This was a go-to meal for me when I was short on prep time until I made it too frequently that my family rebelled.
1 loaf gefilte fish, defrosted
1 16 oz can tomato sauce
1/4 cup white wine (not too sweet)
Assorted veggies, coarsely chopped (I like to use onion, mushrooms, and zucchini/yellow squash)
Spices to taste
Pour a little tomato sauce in the bottom of the pan and place the fish on top so it won't stick. Place veggies all around the fish. Pour the rest of the tomato sauce on top of the fish and veggies and sprinkle with spices (salt, pepper, onion and garlic powder, or whatever spices your family enjoys). Pour the wine over. Cover and bake at 350 for an hour and then uncover and bake an additional 30 minutes. Serve with rice or cooked grains. I like to serve it with a Pereg quinoa mix.
