I didmt eat gebrochs growing up and now that I am married I do.
My. Mil also didn't eat gebrochs growing up so she barely made anything special also.
Please share some nice ideas!
I know I can make schnitzel with matzoh meal, matzabry and knailalach
What else?

The extra matza can hurt your stomach and it's not necessary for cakes. That's my humble opinion. I don't like matza meal as breading either.
Love matza balls.
Matza rolls are great fresh in the morning with cream cheese and tomatoes, and the leftovers wrapped and rewarmed to serve with burgers for dinner.
Matzah pizza is another quick idea to serve on CH.
