What kinds of positions are available in schools other than teaching or secretarial work? Also not psychologist/social worker type roles. So far I've thought of student activities, admissions, fundraising. Anything else?

Assistant? Low elementary classes have an assistant usually.

I want nothing to do with anything in the classroom. I am neither and accountant nor a nurse.

Kitchen?
Why don't you call a school you might want to work for and ask?

I have spoken to a few schools, none of them happened to have any openings in the departments I asked about. They keep contacting me about teaching jobs, but I don't want to teach anymore. But I need something intellectually stimulating. Without going back for another degree. So no therapies or library or anything like that (I'd love being a librarian, but another masters is not an option).

Not all schools require a degree for a librarian. Mostly the public schools do.
Why does it need to be in a school?

Again, no teaching. Gym and art teachers are still teachers. I've never heard of a school that doesn't require a librarian to have a library science degree, but if they exist, I would definitely look into that.
I don't need to work in a school. I have been looking elsewhere without success, and as I have a lot more connections in the school world, I think it might be easier to find something in a school.

My sons yeshiva has a fantastic librarian that is self taught. She used to do it as a volunteer and eventually it turned into a paying job. I would look into it if it interests you.

What about a student support type of position? Helping teachers develop behavioral/academic interventions for students who are struggling, or helping to develop IEPs for students with disabilities?

Administrator? Dean? Head of preschool division? If you have many years of teaching experience, I would assume this would be the next step up the ladder.
Extra curricular coordinator in a HS?
Business office? 😝😝
College advisor?
Janitor? 😂 (sorry had to add it)
