I just saw a lachmajeen recipe somewhere using riced cauliflower for the dough! Kosher l'pesach...not sure where! I have to remember...

My favorite way is to sautee it with lots of the frozen herb cubes and garlic.

I didn't read it but maybe check that out.

Pizza crust. Lots of recipes on Pinter for that. I haven’t tried it but it seems perfect for Pesach. Usually I spread it out on a baking sheet and spray with Pam. Then season and roast. Comes out like crispy rice.

Cauliflower rice is super easy and delicious. Spread cauliflower on a baking sheet, drizzle with some, sprinkle with salt and pepper to taste, mix, bake until soft (approx. 30-40 minutes).

What CAN'T you make with it? It's like the tofu of the vegetable world!
Add it to potatoes 50/50, to cut the carbs in half. You won't taste the difference. Mashed potatoes, potato salad, potato soup, etc.
It takes on the flavor of anything you can throw at it. Bake it on a cookie sheet with parmesan sprinkled on top, as a snack for the kids.
Stir fry Chinese fried rice style.
Add onion soup mix, sauteed onions and mushroom, topped with thinly sliced almonds (DH loves this one).
Saffron, cloves, nutmeg, cinnamon, and cardommon will make it taste like Indian briyani. Serve with chicken curry. Also good with lamb kebabs.
DH and DD both swear that they hate cauliflower, but they will gladly eat it when I season and/or disguise it well. I never tell them until after they've eaten it all and praised it to the heavens.
