Any ideas to use "shnitzle cutlets" but not breading/frying?

Do you mean chicken cutlets? Boneless skinless chicken breasts? Because my understanding is that shnitzel IS by definition breaded

Hi, I "grill" chicken cutlets in a non-stick (Teflon) frying pan. Marinate in a mixture of oil, lemon juice, water and spices, and then "grill" lightly on both sides. It comes out pretty good! My kids like this a lot.

Heat frying pan on high flame (no oil)
When pan is hot put in cutlets
Sprinkle salt and pepper and crushed frozen garlic cubes
Cook on medium flame for 3-4 minuets
Turn over to other side and cook again for 3 min
Stick fork in to make sure it’s cooked thoroughly/ believe it or not it almost always is!
Another way
George Foreman grill
Coat cutlets in lots of mayo- place on grill and sprinkle spices - salt, onion powder, garlic powder, paprika

If it’s a non stick pan it won’t stick -the key is to heat the pan before placing in cutlets (and watch it - don’t walk away while it’s cooking) the juices from the cutlets makes it moist

I assume you mean for Pesach.
You can sprinkle with tarragon, lemon juice, salt and pepper.
Greek cutlets -- saute in pan, then top with tomatoes, olives and mint.
Cut up the cutlets and make a stir fry
Saute garlic and onions. Add chicken, 1/2 cup chicken broth, a jar of salsa and seasonings. Cook.
Marinate in olive oil, garlic, onion powder, and whatever else you want, then pan fry
