Asado. Put in pan sprinkle kosher salt, head of garlic, cloves separated, olive oil and rosemary. Cover tightly and bake at 400 for half an hour and then lower to 325 for another 2.5 hours.

Brisket #3 is great too. Part of it is leaner than the other part if you get a huge one. If it's a smaller one, it's a bit leaner.
Assado is great. I put a spice rub on it with some onions in a pan and roast on a lower heat for a few hours. Towards the last hour, you can add potatoes and/or sweet potatoes to the pan. I usually broil for a few minutes at the end to get it browned and crispier.
