how do I make it in a crockpot without it getting burned? and do I need to brown the meat first?

I found this Joy of kosher recipe. Haven't tried it yet though, but it suggests using a foil layer beneath, & cooked in a slow cooker/chulent bag to not burn & keep moist.
I never use bags during the year, seems unhealthy, but might just for Pesach to try this out. Good luck!
