I have come into tons(!) Of farmera cheese and ricotta cheese (think caterer quantities) and I need recipes that are
1. Delicious
2. Use lots of one or both cheeses
3. Freeze well

Baked ziti with the ricotta.
Farmer cheese based cheesecakes. You can make now and freeze for Shavuos!

Cheese blintzes. I would prepare the filling now and freeze. And make the crepes before use.

The first Balabustas Choice had a recipe that I use and love. I'm at work but can send it to you later in the day.

My kids like cheese latkes made with farmer cheese. I don't know about the ricotta, but you can freeze the farmer cheese in smaller portion sizes to use for future cooking.

cheese noodle kugel:
12 oz egg noodles
3 eggs
1 c milk
1 cup sugar
1 T vanilla sugar
1 small sour cream
1 lb farmer cheese
Cook noodles and drain
Mix eggs, milk sugar and sour cream. Mix in noodles and farmer cheese. Pour into 9x13 pan. Sprinkle a mixture of corn flake crumbs, sugar and cinnamon on top.
Bake @ 350 for an hour

Cheese Blintz Recipe from Balabustas Choice:
Crepes:
2 eggs
3 tbsp sugar
11/2 tbsp oil
Pinch of salt
1/2 cup flour
1/2 cup milk
Filling :
1 pound cottage cheese
1 7 1/2 oz. farmer cheese
1/4-1/2 Cup sugar
1 vanilla sugar
Dash of cinnamon
Crepes: Beat eggs lightly with fork
Mix with sugar, oil , and salt. Add flour, and mix until smooth. Add milk while mixing constantly until smooth .
(I personally use a stick blender to do the mixing of the batter)
Heat drop of oil in frying pan. Pour 2-3 Tbsps of batter into heated pan and fry on both sides, until slightly colored and golden.
Filling: Combine all ingredients and mix ( do this with a spoon)
Place spoonful of filling in the center of each crepe and roll up blintz style.
I have found I need to double the crepe recipe usually.
The original recipe yields : 8-10 blintzes
