What can I do with shredded potatoes? They were supposed to be sliced in the food processor, but was shredded instead. Any ideas?

I saw a recipe of it somewhere for pesach.
You basically make a Layla recipe, and coat shnitzel in it and fry.
Not sure exactly how it’s done unless I find the recipe.
Maybe coat in flour then egg then Latke batter.

Use it as a filler for meatballs, meatloaf or meat pie. Or make a shredded potato layer in the meat pie. You can also make a milchig casserole with heavy cream and cheese.

For potato leek soup I use onions, leeks, olive oil, potatoes, water, salt and pepper. Proportions will depend on how many potatoes you have, but all you need to do is clean and slice the leeks, and fry along with diced onions in olive oil until translucent- (but not crisp). Add potatoes and water just to cover (maybe a little less), and bring to a boil. Since the potatoes are already shredded, it shouldn't take long for them to be cooked through (I usually use diced potatoes, and you can add some diced potatoes in order to get a little bit of a chunky consistency, but it's not 100% necessary). Use an immersion blender for a short time just to get a thicker/smoother consistency. Add salt and pepper to taste.
For reference, I usually make this with about 10 medium potatoes, 2 onions and 6 leeks (the larger the better), but your proportions can vary.

Stuffed baked potato soup:
Cook potatoes and blend until smooth. Add sour cream, salt, and pepper.
Pour into serving bowls. Top each bowl with shredded cheddar, fake BacoBits, and sliced green onion or chives. Add a green salad on the side to balance out the starch.
If you really want to be decadent, make a macaroni and cheese sauce, but substitute the potatoes for the noodles, and bake until the potatoes are done and the top is crispy.
