I have tons of leftover chicken from my chicken soup. Can I freeze it to use in recipes later? If so what would be the best way to freeze it so it wont get freezer burn?
(a second question is that I'd like to puree the veggies and make a small soup out of those for my toddler. would that freeze OK? or be gross when thawed?)

I freeze the chicken from the chicken soup in a resealable bag so I can take out as much as I need ad its in bits anyway.
If you heat up the veggies properly and mix well it should be ok .

I wouldn't freeze if was in fridge for a few days, just the day I make it.

Cuz we like fresh. Next time you make the soup you can consider freezing the amount you won't use that week, the same day you make it. Or not, whatever works for you
