Why is it a mitzvah to sponsor a learning class or shiur via monetary donation? What does it stand for? I know it's done all the time but I'm just trying to understand on a deeper level. Is there even a deeper level?

It's very simple: Im ayn kemach, ayn Torah.
"If there's no bread, there's no Torah."
The person teaching the class or giving the shiur is a human being that has to live. Rabbis also have mortgages and food bills. By sponsoring a class you are enabling the Rabbi to continue learning and teaching. That is a huge mitzvah.

In our local Chabad cheder, we sponsor learning for a yartzeit.

I think it’s that the person who sponsors the learning monetarily enables the learning to happen and therefore gets schar from the learning.

If there are costs involved in setting up the learning then if you money is "earmarked" for a specific class as opposed to just a donation many people feel like they contributed something more tangible.
Honestly I don't know that it makes it any more of a mitzvah than just contributing without the dedication. It could be it's more lishma if there is no dedication with your name but on the other hand it does encourage others to also contribute. So basically it boils down to trying to encourage people to be supportive.
