I tried to make life easy on myself and bought frozen blintz crepes on sale. Unfortunately, they just fell apart the moment I tried filling and frying them. Turns out they don't taste all that great, either. So I'll have to make crepes from scratch, which is no biggie, but I'd like to try and not waste all the wrappers I already bought. Does anyone have any suggestions as to what I can do with them? Thank you!

Make a layer type blintz cake with them? Less likey to break I would think.
