Any good menu ideas? Would like to have the night meals dairy/pareve and day meals meat. Any suggestions?

I'm planning:
-hasselback franks and blanks
-butternut squash soup with fried deli strips
-rice with broccoli and meat/fried deli(General Tso Sauce)
-French roast
-skewered baby potatoes
-meatballs and rice
-tricolor couscous
-chicken
-cabbage noodles
-roasted sweet potatoes
Shabbos will be the regular menu and I'm eating out one meal (praying it will be dairy!).

This one is from the Binah:
Skewered red (or tricolor) baby potatoes:
-1 bag baby potatoes
-1/2 cup oil
-2 Tbsp BBQ spice blend
-salt
Directions:
Preheat oven to 350.
Line baking sheet with parchment paper. Combine potatoes, oil, spice blend in a heavy duty Ziploc bag.
Shake until potatoes are evenly coated.
Spread potatoes in single layer on baking sheet.
Roast uncovered at 350 for 40-45 min.
Remove from oven and sprinkle with salt.
Thread onto skewer.
(My friend makes a variation of this with olive oil, salt and pepper. Use whatever spices you like.)
Rice with broccoli and meat/deli:
-rice
-frozen broccoli, defrosted and liquid squeezed out
-deli or meat, cut in thin strips
-General Tso sauce
-soy sauce
Directions:
-cook rice (or make in oven) and set aside.
-sautee onion for a few min
-add strips of deli or meat and sautee until mostly done
-add broccoli and sautee until done but not too soggy
- pour general Tso sauce and a little soy sauce.
Heat rice and broccoli/deli mixture separately.
Note: it is amazing fresh. I'm not sure how well the broccoli/deli will reheat. If you can't make it fresh, maybe undercook the broccoli originally and only add the sauces later...?
Maybe someone with more experience has some tips.
