I bought a lb. of ricotta cheese for a quiche and realized that the recipe I made didn't call for it. Any recommendations, recipes? I'm looking for savory, not sweet. Thanks!

Thing is, I already have blintzes (one meal), spinach mushroom quiche (another) and am doing 2 milchig meals. So I might just use it after yom tov.
Does ricotta freeze well? I freeze a lot of things other people don't.
