I make one every week. I don't blend it, I like it better grated.
Grate:
1 onion
1/2 large zuchinni, (peeled or unpeeled. peeled if you don't want to see green in your kugel. )
8 potatoes
mix in 4 eggs
salt, pepper, garlic
grease 9 X 13 pan well, bake at 350 until top is brown.

I've been making zucchini kugel a lot lately b/c we have TONS of zucchini in the garden.
6 potatoes
4 large zucchinis
2 carrots
3 onions
8 eggs
3/4 cup flour
baking powder
garlic salt
pepper
Shred potatoes, zucchinis and carrots in the food processor
Sautee diced onions
beat eggs, add flour and baking powder
mix together and add plenty of garlic salt and pepper.
Bake at 350 for hour and a half (or until golden brown)
You can probably use less eggs. . . I'm just bad at figuring out if it's possible. I always get scared that there's not enough to hold it together b/c there's such a large amount of shredded stuff.
I put it in 5 (I think 9 inch) round pans and freeze them.
